Spice up your daily egg breakfast recipes!

I can't remember when I never had eggs in my everyday breakfast routine. Of course like an average Joe, I grew up with a more plain and simpler taste in cooking eggs. I usually preferred the Pinoy omelet version cooked either with onions or tomatoes altogether or might as well settle for plain sunny side up. There's something about its saltiness, creaminess and versatility that makes it the most popular comfort food of all time.

This is probably not the fondest original version with a twist of Filipino Spanish omelet recipe as it varies in other parts of the world. But one thing for sure is that it is the easiest among the omelet recipes you might know.

When it comes to breakfast, you can never go wrong with omelets. Plus, its amazing how these simple ingredients can turn into one awesome dish!

Ingredients

  • 2 pieces eggs
  • 1/4 tsp of salt
  • 1/4 tsp of pepper
  • 1/2 onion chopped
  • 1 tomatoes
  • 1 tbsp. cooking oil

Instructions

  1. Add the cooking oil in the frying pan and switch it into a medium high heat. Then add the onions and tomato to saute until soft using a spatula to flatten and mix all its juices together. Now season the eggs with salt and pepper and pour over the onions and tomato you saute earlier. And then fold the eggs so that the onions and tomato mixture are well distributed.

Ranchero Omelet Recipe - If you love Mexican food and omelet, you gotta try this recipe!

If you are looking for an omelet snack dish, this recipe is something worth to consider. Plus it is so easy to do and delicious at the same time. It can be compare to a tortilla and omelet rolled into one.

This recipe only serves one person. If cooking for more than one, it's easiest to make one at a time.

Ingredients

  • 1/2 cup beans
  • 1/4 cup salsa
  • 2 pcs eggs
  • 2 tbsp water
  • 2 tbsp cheddar cheese

Instructions

  1. In a small sauce pan over low heat, stir in together the beans and salsa. On a separate bowl, beat together the eggs and water. On a separate pan, pour in the egg mixture over medium to high heat. Cook until tip is thickened and no visible liquid egg remains. Then spread the hot bean mixture on the center of the omelet then sprinkle with cheese then fold the sides of the omelet.
  2. Put it on the plate and pour in the remaining salsa on top.

How to Make Spanish Potato Omelet

An Omelet Recipe with a Spanish Flair

You'll go nuts with this sumptuous Spanish Potato Omelet recipe which you can cooked as easy as 1-2-3!

Ingredients

4 pcs medium sized potato, peeled & thinly slices

6 pcs fresh large eggs

1 pc Onion, chopped

1 Green pepper, chopped

Cooking oil for frying

Salt & Pepper to taste

Cooking Procedure

Heat the oil in the pan. Gently fry the sliced potatoes until almost soft then add the onion and green pepper and continue frying until vegetables are soft. Drain the vegetables in a colander to get rid of the excess of the oil. Beat the egg in a bowl and season with salt and pepper. Add the vegetables.

Heat a little oil in a pan on a moderate heat and pour the mixture. Once the bottom of the omelet has set turn the heat down and cover the pan. Cook for about 5 minutes or until it has set for both side.

Mexican omelet doesn't vary that much to a Spanish omelet although it has a more creamier taste due to the use of dairy products like milk and cheese. But you can always adjust its taste depend what you prefer.

This recipe is truly a Mexican omelet dish.

Ingredients

4 pcs of fresh eggs

1/3 cup of milk

3/4 cup shredded cheese

1 red bell pepper, finely chopped

Spring onion, trimmed and thinly sliced

Parsley leaves, finely chopped

20g butter

2 tbsp olive oil/any cooking oil

Cooking Procedure

Beat the eggs, 1/4 cup cheese, salt and pepper to taste. On a separate bowl combine the bell pepper, onion, parsley and 1/2 cheese. Heat half the butter in a non-stick pan pour in the egg mixture and cook for 2-3 minutes or until the egg starts to set.

Sprinkle half the bell pepper mixture over omelet and cook for 3-4 minutes until golden. Roll up the omelet and serve.
